I always thought blue would work, since it is still Luigi. but since he's still Mr. L if you fought him there would be something with his eyes cuz of the blue color that could make Mario pause for a second or something....

but i guess that's just me and my ideas... :q

I say 'white', because it sort of steals away any sort of controllable personality, which is what he was. Now, if Mr. L is supposed to be a new other-person character separate from Luigi, I might have gone with blue, but eh, I kinda like white.

I would go with blue, since the white is the only way you can see his eyes with the mask. Mario, Luig, and Peach have beady black eyes in paper form.

although I'd give him a different shade of blue, maybe like Pauline's pale silvery blue color.
